Mexican food is as common as it is unique. You can visit dozens of Mexican restaurants, order the same dish, and experience a surprising range of tastes, flavours, textures and presentation. Many Chefs put their own spin according to their own taste. As long the food is delicious and well-enjoyed, its made right!
Here’s a few things we do our own way:
Chiles Rellenos Traditionally made with Poblano peppers, stuffed with cheese, dipped in egg batter, and fried. However, no two peppers are the same in shape and size, making consistent portioning nearly impossible. We cut the Poblanos to fit mini-loaf pans, layer them with Jalapeno-Jack cheese, cover them with buttermilk-egg batter, and bake them to golden perfection.
Tamales Traditionally made with Maza that contains about 20% lard, which can feel heavy to digest. We use a blend of butter and peanut oil instead, creating a lighter result.
Burritos We make our burritos without rice as a filler. We believe rice has no place inside a Burrito — it dilutes the flavours and texture of the main ingredients.
Cheese We grate our own blend of Mozzarella and Edam cheeses on a regular basis.
Tortilla Chips Our tortilla chips are fried to order — never days or weeks in advance and packaged in a bag. We fry them in beef tallow, delivering unbeatable taste and crunch.

Here is our Glossary of the menu ingredients we use as Las Chimi’s:
3D Cup – A 2 oz cup with 3 dips: guacamole, sour cream & salsa. Included with chimichangas and fajita burritos.
Beans – Pinto beans, cooked and mashed on board.
Beef – Slow-simmered and hand-pulled.
Beef Tallow – Used in our fryers for exceptional taste.
Canola Oil – Will never be used in this food truck.
Cheese – Our blend of freshly grated mozzarella and Edam.
Chicken – Slow-simmered and hand-flaked.
Chorizo – Our ground pork, marinated in chiles, garlic, and spices.
Consomé – Our beef broth with red chiles, cilantro & onion.
Extra-Hot Sauce – Our salsa, spiced up with extra jalapeño peppers.
En Molé – Molé Poblano is a rich and complex sauce consisting of mulato and pasilla chiles, sesame seeds, garlic, onion, thyme, cinnamon, raisins, peanuts, unsweetened cocoa, and spices.
Peanut Oil – Used exclusively in all recipes.
Pico (Pico-de-gallo) – A fresh Mexican relish of diced tomato, white onion, cilantro, a touch of jalapeño, lime juice, and salt.
Pork – Slow-simmered and hand-pulled.
Rice – Mexican style, made with tomato juice and corn kernels. Brushed with sauce to add flavour and prevent drying out during the baking process.
Salsa – TTaco sauce made with fresh tomato, onion, cilantro, and jalapeños..
Salsa Amarilla – An aromatic yellow sauce featuring green pepper, green chile, and tomato. Used in chicken, seafood items, and chiles rellenos.
Salsa Roja – A spicy red sauce with four varieties of red chiles, tomato, and spices. Used in beef items, cheese enchiladas, and bean burritos.
Salsa Verde – A zesty green sauce with imported Mexican salsa verde, tomatillos, and poblano peppers.
Seafood – Wild-caught: ling cod and Argentine prawns. We shall never serve any farmed seafood in this food truck.
Soybean Oil – Shall never be used in this food truck.
